Healthy Breakfast Recipe: Cinnamon Roll Oatmeal Cups

As a certified nutrition coach and 5 years of experience in the health and fitness industry I’m extremely passionate about showing people that eating healthy doesn’t have to be a chore and can be absolutely delicious!

If you find yourself running short on time in the morning and skipping breakfast, these are you for you! Not only are they packed with protein and full of yummy cinnamon roll flavor, they can also be made in about 25 minutes. Prep these babies the night before and grab and go to jumpstart your morning! Enjoy!

Ingredients:
1 ½ cups old fashioned oats
2 scoops Bad Vanilla Protein
1 tsp ground cinnamon
3 tbsp coconut sugar
1 tsp baking powder
1 large egg
1 tbsp butter, melted
1 cup unsweetened almond milk
¼ cup plain nonfat greek yogurt
1 tsp vanilla extract

Frosting: 
4 oz greek yogurt cream cheese
1 tbsp unsweetened almond milk
1 scoop Bad Vanilla protein
1 tsp honey

Directions:

Spray a muffin tin with nonstick spray and preheat oven to 350 degrees F. Set aside.

In a large mixing bowl, mix oats, protein powder, cinnamon, coconut sugar, and baking powder until combined. Add egg, melted butter, almond milk, greek yogurt, and vanilla and mix until smooth.

Using a ¼ cup, scoop batter into muffin tin (should fill about 8). Bake for 15-20 minutes, or until set.

Using a hand mixer, whisk frosting ingredients together until smooth and pipe onto oatmeal cups.

Makes 8 cups. Serving size: 2 oatmeal cups with frosting.
